The authentic tradition is nourished by research and new achievements to save forgotten recipes, flavours and scents. As in the past, alpine milk is processed in the mountain huts, and cheese, cream and butter are produced. As in the past, the mountain ingredients are cereals, wild herbs, berries, and meat from the inhabitants' own farms. Today, these have ethical and sustainable certifications.
