The Predazzo and Moena cheese factory of the "Gruppo Formaggi del Trentino" is a member of the "Consorzio di tutela per il formaggio Puzzone di Moena DOP", the "Consorzio per la tutela del formaggio Grana" and the "Strada dei Formaggi delle Dolomiti".
The highest pastures of the Fassa and Fiemme Valleys provide the raw material: a milk perfumed with the fragrance of meadows, flowers and cream, used with the sole addition of natural rennet for the coagulation of casein and salt in brine, without any additives or preservatives, according to specifications. The fir boards in the valley guarantee protection and maturing according to the rhythms of nature: no forcing, but only the time needed to acquire the authentic aromas and flavours of cheeses made "as in the old days". The producers' experience is the key to thirty years of success: quality is the enemy of haste but the ally of "knowing how to wait" for the right moment for each individual cheese. Puzzone di Moena, or "Spretz Taorì" in Ladin, which obtained PDO certification in 2013, is the flagship cheese of the dairy: a raw milk cheese with a strong flavour, the undisputed protagonist of traditional dishes and an indispensable companion for every taste adventure in the Dolomites.
The historic shop in Predazzo is the point of reference for the people of the valley: in the heart of the dairy is the first point of sale, a meeting place open to anyone who wants to get to the heart of the work of members, conferters, producers and supporters. The bistro along the Dolomites state road between Predazzo and Ziano is the living room of cheese lovers and gourmet enthusiasts: wood, rock and glass are the ideal setting for tastings, taste verticals and the discovery of mountain zero-kilometre products.
