The aroma of milk and cheese hovers around the Caseificio Sociale Catinaccio Il Fassano - L Fassan, in a panoramic location just outside Vigo.
Within the walls of the small factory, opened in 2014 by the farmers of Agritur Majon da Mont and Agritur Weiss in Vigo, who provide about 4000 quintals of milk per year, "Il Fassano" is created. It is a raw milk cheese, which guarantees the authenticity of the product and narrates all the goodness of the territory, with the unmistakable aroma of grass and fresh flowers. This cheese is aged for at least 60 days. The paste is ivory in colour with homogeneous eyes and gives a pleasant softness in the mouth thanks to the amiable flavour, with notes of cream, hay and hazelnut. In addition to "Il Fassano", with the milk of the cows that graze all summer on the pastures of Vigo, "Il Laurino", various types of caciotte, blue cheese, yogurt and also different forms of Puzzone di Moena PDO are produced.
