In Soraga di Fassa, a house, a family, a peasant tavern, a Slow Food alliance between chefs and small producers to promote good, fair and clean local foods and to safeguard biodiversity.
Above one of the oldest urban settlements in the Fassa Valley, in the middle of meadows and dense forests, where the Avisio widens to slow down its run towards the Adige Valley, the Brunel family teaches respect for nature, peasant pride and the quality of simple and genuine things. The farm includes a vegetable garden, an educational farm and a stable and produces vegetables, cheeses and a Slow Food Presidium honey. Here everything is in the name of respect for the land and people, including the laboratory for the processing of agricultural products, the first and only organic certificate in the Val di Fassa. The dishes, from appetizer to dessert, use herbs and mountain flowers such as mountain pine, larch flowers, spruce, yarrow or elderberry and local products.
